		<description>Hi!  You were wondering what to do with your ume miso.  We store ours in the fridge and have had it for almost 2 years.  We mix vinegar to taste and use it as a non oil salad dressing,  as is as a dip for raw vegetable sticks, and also as is when we eat our oden in winter.  It is especially good on konyaku and daikon (Japanese raddish) oden.  Just tonight I was watching NHK cooking and they used it to cure their rakyo (recipe in Kyo no Ryori June 2009).  It sure looked good!</description>
